Cafe con Miel made with Keurig Kcups


If you have been around a while you have come to know (and hopefully love) our Monday K-cup coffee recipes.  I love fun, easy to make coffee drinks! They are a simple indulgence that can usually be made with ingredients already in your kitchen.  There will be no running to the local coffee shop around here, no sir,  we have Keurig’s in our kitchen that make these recipes easy peasy.

This week specialty Kcup recipe is …Cafe con Miel.

This is a new one to me.  I had never heard of Cafe con Miel until now. Cafe con Miel is a Spanish drink and translates to coffee with honey.  I am HUGE honey fan,  I buy it in bulk and use it on and in everything as a sugar substitute.  From brownies to oatmeal and cottage cheese to strawberries,  I put it on everything (I think I have a honey addiction!).  So,  when I came across this recipe it was right up my alley.

The simplicity of this Kcup recipe also appealed to me.  There really isnt much to it and the results are amazing!

You can use any Kcup your little heart desires but,  I always choose a dark roast or extra bold coffee in any of my recipes.  I just think you need to go very strong with your Kcup coffee choice so that it can stand up to the milk and other ingredients in the recipe without getting watered (or milked?) down.

Let’s get to the recipe…

Prep Time: 1 minute

Cook Time: 4 minutes

Total Time: 5 minutes

Yield: 3 to 4 servings

Ingredients:

  • 2 cups fresh-brewed Kcup coffee preferably a dark roast or extra bold Kcup
  • 1/2 cup milk (or your favorite alternative)
  • 4 tbsp. honey
  • 1/8 tsp. pure vanilla extract
  • 1/8 tsp. cinnamon (another addiction of mine!)
  • dash nutmeg

Preparation:

Brew your favorite Kcup on the lowest water setting.  You will need to brew 2 or possibly 3 to get the 2 cups of coffee that the recipe calls for.
Over low or medium heat, warm all ingredients in a small pot, but do not bring them to a boil.
Stir well to dissolve the honey, and then serve hot in small mugs.
I topped mine with a dash of cinnamon… mmmmm perfection!
I am so happy to have a another great Kcup coffee recipe in my arsenal.  It is so simple and tasty.  Cafe con Miel would make a great after dinner light dessert especially if you are entertaining…wow your guests and feel ubber sophisticated,  it will be our little secret that it is really easy as can be ; )
