Keurig Kcup Pumpkin Spice Latte


If you have been around a while you have come to know (and hopefully love) our Monday K-cup coffee recipes.  I love fun, easy to make coffee drinks! They are a simple indulgence that can usually be made with ingredients already in your kitchen.  There will be no running to the local coffee shop around here, no sir,  we have Keurig’s in our kitchen that make these recipes easy peasy.

This week specialty Kcup recipe is …Pumpkin Spice Latte!

I have been dyyyyiiinnnggg to share this recipe!!  I knew I had to wait  for the right time of year and …yay… it’s here! Nothing says fall like pumpkin. It is time for pumpkin butter, pumpkin muffins, cookies, pies and best of all PUMPKIN SPICED LATTE made with Keurig Kcups of course!

I made this recipe on Halloween last year in a large batch,  kept it warm in my crock pot and served it to the adults-  it was a huge hit!  We all walked around my neighborhood with our travel mugs filled with this delicious treat.  The best benefit was it helped to keep our grubby little paws out of our kids candy bags (kind of!).

As always I recommend using a dark roast or an extra bold Kcup but in this instance a Pumpkin Spice Kcup would be a great flavor enhancer and good news,  this is a Green Mountain Pumpkin Spice is Fair Trade certified.

Lets get to the recipe…

Ingredients:

1/2 cup whole milk (or your favorite alternative)

1 T unsweetened  pumpkin puree
1 t packed light brown sugar
1/4 t pumpkin pie spice
1 t vanilla extract
1 Keurig Kcup brewed on the lowest water setting
2 T half & half cream
1 t granulated white sugar
whipped cream, optional (cinnamon whipped cream would be fantastic!)
ground nutmeg

Directions:

1. In a glass measuring cup or microwave-safe bowl, whisk together milk, pumpkin, brown sugar, spice and vanilla. Microwave for 1 to 2 minutes- remove it from the microwave when the milk is hot and frothy.

2. Pour the pumpkin milk into a tall mug or glass. Add hot coffee. Pour in the cream. Add a teaspoon of sugar. Stir, and taste. Add more sugar, if desired.

3. Optional, but oh so good… add whipped cream on top and a sprinkle of nutmeg. Serve immediately!

**Tips**

-Use fresh pumpkin, not only is using a locally grown pumpkin great for the environment but,  it tastes better and is packed full of nutrients. It is so easy to make pumpkin puree – simple wash the pumpkin and place it in your crock pot for eight hours.  Remove,  cut in half, scoop out the seeds,  scoop out the pumpkin meat,  puree in your blender… viola… fresh pumpkin puree!

-If you do not have pumpkin pie spice on hand (I never do), make your own.  Mix equal parts of cinnamon, ginger, allspice and nutmeg and you have pumpkin pie spice.

I can’t stop thinking of pumpkin recipes,  I become obsessed every fall.  But, can you blame me?  The taste is so comforting and soothing as we transition from sunny days at the pool to cozy blanket wrapped,  sipping a delicious hot beverage days by the fireplace!
